Descrizione
The Agriturismo Rechsteiner dedicates an evening to the flavors of autumn with the Goose Dinner, a culinary journey created by chef Walter Naimo that puts one of the ingredients most tied to seasonal tradition at the center.
The menu guides guests from the entrée to dessert through preparations that reinterpret the goose with contemporary pairings, different textures, and references to autumn products. The evening opens with goose mousse and crunchy polenta, followed by smoked goose with roasted cardoon and raspberry sauce. The first course features "La Fagiana" Carnaroli rice with white goose ragù and fermented lemon, while the second serves goose in tecia, accompanied by Dominicale sauce, roasted chestnuts, and sautéed escarole. The journey concludes with a chocolate brownie with Grappa di riserva Rechsteiner zabaglione and mandarin.
Each course is paired with a selection of wines from Cantina Rechsteiner, creating a journey that connects cuisine, seasonality, and the winemaking production of the estate.
